Dash Farms Vineyard, Faraday, Bendigo G.I
Captivating pale apricot and bronze hue in the glass.
Rose water, dried rose petals, fresh cream, lemon and strawberry aromatics are savoury yet fresh and inviting.
Lovely soft feeling on the palate, the fizz is gentle and fine. Orchard fruits of peach and nectarine with touches of sour cherry and plum. A long refreshing finish driven by bright acidity.
Jeez, it's pretty delicious and quite poised. A very easy, classy aperitif.
Super perfumed and refreshing non-disgorged sparkling grown on Leanganook granite.
Vineyard
From a very particular block at Dash Farm where the western side of the mountain dips to create an eastern exposition. It's a fabulous block of Syrah and one I have wanted to make something delicate from for some time.
The block is planted N/S orientation, granite, 460m up.
Winemaking
Harvested 6th of March, ultra gentle whole bunch pressing direct to old puncheons, only the finest juice taken for this wine. Fermented without addition and blended to stainless just as primary finished (approx. 6 weeks). Malo in stainless and then allowed to settle before racking and a classic tirage bottling.
