Bright rose gold / copper hue. Subtle aromatics of fresh raspberry, zesty lemon and savoury green fig leaf.
Very bright and zesty, a gorgeous airy mouth feel. Subtle strawberry flavour over ‘wet rocks’ minerally core leads to a tangy, creamy finish. - Reminds me of my grandmother's sponge cake. Very energising sort of a lunch time / aperitivo fizz, clean as a whistle and very moorish.
Ultra-light and refreshing non-disgorged fizz from a block of grapes I’ve admired for some time. Trying to show another side of one of the most wonderful viticultural resources in Central Victoria - Syrah on granite.
Vineyard
From a very particular block at Dash Farm. Here the western side of the mountain dips to create an eastern exposition. It's a fabulous block of grapes and one I have wanted to make something delicate from for some time.
The block is planted N/S orientation, granite, 460m up.
Winemaking
Harvested 24th of March. Ultra-gentle whole bunch pressing direct to old puncheons, only the finest juice taken for this wine.
Fermented without addition and blended to stainless just as primary finished (approx. 6 weeks). Malo in stainless and then allowed to settle before racking and a classic tirage bottling early June 2023. Released without disgorgment, no sulphur added.
