Dash Farms Vineyard, Faraday, Bendigo G.I
A lovely clean and textural white from the mountain granite.
Clear pale golden hue. A reductive, mineral nose – smells like wet clay, subtle lilies, very slightly flinty.
Nice flow on the palate; sweet lemon, Granny Smith and Pink Lady apple juice, little oranges and nectarine on the palate. Lovely and light, with persistent but balanced acidity.
Subtle minerality, very moreish length, and finishing very dry. Absolutely delicious and easy.
Vineyard
Predominantly from Dash Farms at 475 metres elevation, with a north–south row orientation on quartz and feldspar sand or decomposed granite. Planted in the 1990s to I clones. The vintage was sunny and relatively early compared to the very cold and late run from 2021 through 2023.
Winemaking
A multitude of picks. The base of the wine is essentially one rolling ferment in stainless steel at cooler temperatures. The handling of each parcel is individual to reflect the needs of the fruit as its ripeness changes, both over time and as we progressively work down the hill at Dash Farms. This stainless ferment was stirred and moved to old barrels once completely dry. A small portion (less than 10%) was fermented in younger French oak. We select our favourite barrels and blend in late summer, bottling in-house April 2025.
