A co-fermented maceration from the mountain.
Ripper colour; amber-like, but more red and high-vis pink in the mix. Rather neon.
Very sweet perfume, reminds me of Aperol – plum, cherry, as well as sweet rose, musk, wisteria in springtime, and some blood orange juice and orange blossom. Lovely slinky, dry palate: blood orange juice, lemon juice, just underripe raspberry, wild strawberry, cranberry. Very rocky, mineral, and dry finish. Very fun and easy to drink.
Vineyard
A trio of neighbouring blocks at Dash Farms. Riesling sits just above the Chardonnay, with the Gris immediately to the north — or to the left of view if you’re looking up the slope. All share the granite soils and westerly exposition, with a slightly more northerly aspect in both the Riesling and Chardonnay.
Winemaking
From adjacent blocks of Pinot Grigio and Riesling at Dash Farms Vineyard. A late harvest; we pursue full ripeness from both phenolic and flavour perspectives to have a wine with layered perfume, complex fruit, and very fine tannin.
Entirely destemmed and co-fermented in 3,700-litre cement tanks for three weeks. No pumping or plunging took place during fermentation. The ferments were drained without pressing, with the free-run juice left to settle and stabilise in stainless steel prior to a short élevage in used puncheons.
