Super perfumed and refreshing non-disgorged sparkling grown on Leanganook granite.
Clear and bright pale peach colour. Perfume of peach, orange blossom, yellow roses and spicy citrus/Szechuan pepper aroma — super refreshing and exciting to smell. Small berry fruits of cranberry, freeze-dried raspberry, lemon, and juicy yet dry peach that is persistent. Gentle structure, very fine and persistent. Right in the pocket for summer fizz needs.
Vineyard
From a very particular block at Dash Farm where the western side of the mountain dips to create an eastern exposition. It's a fabulous block of Syrah and one I have wanted to make something delicate from for some time.
The block is planted N/S orientation, granite, 460m up.
Winemaking
Early harvested when we see beautiful strawberry water, raspberry, fresh mint and rose water flavours on the vine. Extra careful whole-bunch pressing — long and slow — with only the very finest juice taken for this cuvée.
Fermentation begins in stainless steel before being transferred to old French puncheon for the majority and remainder of fermentation, malo and élevage on lees. Topped studiously prior to blending.
When blending, we consider early-cut Blanc de Blanc barrels for length, complexity and added finesse — the challenge being not to dull the floral and delicious fruit of the Syrah base too much. In 2025, we chose just a single barrique of Chardonnay to strike this balance.
Bottled in-house with a traditional tirage bottling, then aged on lees in bottle, resting on their sides in our cellar prior to release.
